Authentic Vada Pav

Introduction

Vada Pav is one of the tremendously famous street food in India, especially in Maharashtra. You will find vada pav stalls at every corner of the street, at food lanes, outside companies, railway stations, bus stops. It is enjoyed with a hot cup of tea.

Be it a student, a software engineer, a teacher, a work laborer, a kid, literally everyone enjoys this mouth-watering dish of vada pav.

At my place in Pune, there are so many vendors selling Vada pav and have established their brands just by selling this awesome dish all over these years. One such brand is Goli Vada Pav, Joshi’s Vada Pav and also there are a myriad of local brands in every region. I am a potato lover and this is my favorite street food, so I make it quite often.

During rains, one must look at the shops of these vendors selling vada pav, they are simply overflowing with the orders and the rush outside the shop will make you crazy. Such is the love for savory Vada Pav. I miss this the most in USA – yummy, mouth-watering street foods.

So let’s get started to understand how to make vada pav recipe. I have segregated this recipe into five sections.

Recipe

Preparation Time: 20 minutes
Cooking Time: 45 minutes.
Overall Time: 1 hr 5 minutes

Ingredients For Authentic Vada Pav Recipe

-3 to 4 large-sized potatoes, boiled and crushed

-2 cups of besan

-Around 400 ml of Oil for frying and 2 tbsp of oil for making sabzi

-4 to 5 green chilies, slit or chopped

-3 cloves of garlic

-2 tbsp of coriander leaves, chopped for garnishing and 2-3 tbsp for grinding in mixer for sabzi

-1.5 tbsp of cumin seeds

-1/2 tbsp of turmeric powder for sabzi and 1/2 tbsp for batter for making coating

-Salt as per taste

Step 1: Place garlic, green chilly, and coriander leaves into the mixer and grind it.

Step 2: Heat oil in a pan.

Step 3: Add cumin seeds to the pan.

Step 4: Once cumin seeds splutter, add turmeric powder.

Step 5: Add boiled crushed potato to the pan and then add the garlic, chili, coriander mixture from the mixer into the pan.

Step 6: Sprinkle finely chopped coriander into the pan and mix everything well.

Let it cook for 5 minutes, transfer it into a wide plate and let it cool.

Making vada’s

Once the sabzi cools, start making vada’s from the sabzi. Apply a little bit of oil on your palms and then start making vadas. Applying oil will avoid sticking of sabzi on your palms and you would be able to make the vadas easily.

Make the vadas and keep them on a plate.

Preparation Of Coating

Step 1: Add besan to a utensil and then add salt and pinch of turmeric powder to it. Mix it. Add some water and make a nice lump-free batter by whisking it. Do not make the batter too watery.

Frying Of  Vada

Step 1: Heat oil into the pan.

Step 2: Now transfer one vada from the plate (in which we vadas were placed )  into the batter and coat it well. After this, fry in the pan with hot oil.

Repeat this procedure for all vadas.

Assemble Vada Pav

Just cut the pav’s from the center with a knife and apply some green chutney to it. You can also use tamarind chutney. In that case, apply tamarind chutney on one side and green chutney on another side.

Now stuff vada in it.

Your spicy vada pav is ready to serve.  Serve it with onions or with green chilly that is fried and seasoned with salt.

Key Points 

1.Do not over boil the potatoes as it will become too mushy and you will not be able to make vadas out of it.

2.If you like spicy vadas then add more green chilly to the mixer when grinding it will garlic and coriander.

3.If you do not have green chutney then you make use spicy groundnut chutney instead.

4.Adding of garlic and green chili actually brings the authentic taste to vada so do not skip them.
