Usually, we experience hunger pangs between two main meals and its exactly when roasted makhana comes into picture as a mid-meal. It hardly takes 15 minutes to make it. Yes, it is that quick. Plus, you can store it and hence gives relief from cooking of mid-meals daily.

How to make Roasted Makhana?
All it needs is roasting makhana in ghee with black pepper powder, chat masala and salt.
Variations
Spicy Masala – In this version, you can add turmeric powder, red chilly powder to the makhana along with chat masala, black pepper powder.
Peri Peri Masala – You can add peri peri masala along with chat masala, black pepper powder and salt.
Caramelized – In this version, add ghee to a hot pan and add crushed jaggery to it. When the jaggery melts completely, add roasted makhana to the it and mix everything well so that makhana are coated with jaggery properly.

You can have it when hungry or it can be enjoyed more with a cup of tea or coffee in the evening.
How to know makhana roasted properly?
It should be crunchy when you bite it and also should not stick to your teeth when eating.
If that’s the case, then roast it again on low/medium flame for few more minutes.

You can store it for a week or two in an air-tight container.

Ingredients
-2 cups of makhana ( 1 cup = 250 ml )
-1/4 tsp of salt or as per taste
-1 tbsp of ghee
-1/4 tsp of Black pepper powder
-1/4 tsp of Chat masala
Step 1: Heat ghee in a pan.
Step 2: Add makhana, chat masala, black pepper powder, salt to the pan. Mix everything well.
Roast on medium flame till it turns brown for 10 to 12 minutes.
Step 3: After 12 minutes, switch off the flame.
Once it cools, you can store it in an air-tight container.
Tips
1.Roast on medium or low flame so that it turns crunchy.
2.Homemade ghee is the best for this recipe. However, ready-made ghee or clarified butter can be used as well.
3.You can even add red chilly powder to the makhana if you want it spicy.
