Lauki ki Sabji is a dry, simple and healthy sabji which is served with chapati or phulka.
Lauki is a hindi name for “Bottle Gourd” in India.
This is an easy recipe that can be cooked within 25 minutes. Adding of moong dal to the sabji enhances the flavor of sabji and makes it more healthier.
I remember eating this lauki ki sabji at home on regular basis since childhood. Its such a satisfying meal.
It requires minimal spices, oil, moong dal and lauki.
As we all know, there are so many benefits of having bottle gourd aka lauki. It reduces stress, helps in weight loss plus improves digestion.

-3 tbsp of Oil
-1 tsp of mustard seeds
-1 tbsp of grated garlic
-8 curry leaves
-1/4 tbsp of turmeric powder
-Pinch of asafoetida
-1 1/2 tsp of coriander powder
-1 tsp of garam masala
-1 tsp of red chilly powder
-2 tsp of salt or as per taste
-1/4 tsp of granulated sugar (optional)
-3 tsp of lemon juice
-8 tbsp of moong dal, soaked
-2 tbsp of coriander leaves, finely chopped
-1 bottle gourd, peeled and chopped
How to make Lauki Ki Sabji
1.Soak moong dal before you start with this recipe.
2.Wash the bottle gourd/lauki under running water for about 30 to 40 seconds. Cut the head and tail part of bottle gourd and discard it. Now peel the lauki and chop it.
3.Heat the pan/kadhai. Once the pan is hot enough, add oil to the pan. When the oil is hot enough, add mustard seeds.
4.Once the mustard seeds crackles, add chopped garlic and curry leaves and sauté for 20 to 40 seconds.
5.Add turmeric powder and asafoetida to the pan.
6.Add chopped lauki/bottle gourd to the pan and mix everything well.
7.Add coriander powder, red chilly powder and garam masala. Mix everything well. Now let the sabji cook for about 5 minutes.
8.After 5 minutes, lauki will turn soft. Now is the time to add soaked moong dal. Drain the water from moong dal and add it to the kadhai. Do not mix the sabji and keep the moong dal above the lauki. Cover the kadhai and let it cook for 15 minutes.
9.After 15 minutes, moong dal will be cooked properly. Now mix the sabji, add salt, lemon juice, sugar to the sabji. Again mix quickly and let it cook for a minute. Add chopped coriander to the sabji. Switch off the flame.
Your lauki ki sabji is ready to be served. Garnish the sabji with finely chopped coriander leaves.
1.Adding of garlic and curry leaves enhances the tatse of sabji. So do not skip it.
2.Also, adding of moong dal uplifts the flavor of sabji.
3.If you like spicy food, then you may increase the quantity of red chilly powder.
4.Keep checking the sabji every 5 minutes so that it doesn’t get burnt.
The water content in bottle gourd/lauki has cooling impact ton the body and hence reduces stress.
Bottle gourd are rich in fiber and alkali content which helps in digestion.
