I vividly remember, how the aroma of Gajar Halwa filled our home when my mom cooked it. Now the same thing happens, when I cook gajar halwa, my kid comes to the kitchen and says “What are you cooking? it smells so good”. (Haha!!)
This dessert can be made quickly and with very less ingredients. You can make this if you have guest coming over at your place, on special occasions like birthdays and anniversaries. 🙂
How to make this Gajar Halwa?
You need to wash, peel and grate the carrots. Grated carrots now need to be cooked in ghee and once the carrots become soft, you need to add milk.
After this, add powdered cardamom and grated almonds. Once the milk is absorbed by carrots, it’s time to add sugar. Mix everything well. Allow it to cook for couple of minutes. That’s it.

Ingredients
-6 Carrots, medium-sized, grated
-4 tbsp of Ghee/Butter
-1 cup of Milk (1 cup = 250 ml)
-1 tbsp of Cardamom powder
-1 tbsp of grated Almonds
-1 tbsp of grated Pistachios
-1/2 cup of Sugar ( 1 cup = 250 ml )
1. Wash, peel and grate the carrots. You can grate carrots using grater or using food processor. Food processor will make your task easy.
Try to get tender and juicy carrots.
2. Heat pan.
3. Once the pan is hot, add butter to the pan.
4.Add grated carrots to the pan.
5. Let it cook for 5 minutes. The carrots will start getting softer. Add cardamom powder, grated almonds and grated pistachios.
6.Add milk to the pan and mix everything well. Let the halwa cook on medium flame. The milk will be absorbed by carrots. You need to keep on checking halwa as it should not get burnt.
7. Once all the milk is absorbed, add granulated sugar to the pan.Mix well again and let it cook for couple of minutes.
That’s it. Your Gajar Halwa is ready to be served.
Tips
1.You can add raisins and cashews as well to the halwa.
2.I have used whole milk for this recipe. You can use full fat milk as well.
3.Gajar halwa can be stored in refrigerator for almost 8 days when stored in air tight container.
