What is Egg Curry?

Egg Curry is a curry made with basic tomato-onion gravy along with Indian spices. Then the hard boiled eggs are peeled and added to the gravy.

To make this curry, you need to sauté onion, garlic, ginger till it gets fried properly. Then add tomatoes, let them cook properly.

After the tomatoes are cooked well, add spices, water, kasuri methi and let the curry simmer for some time. Next step is to add boiled and peeled eggs to the curry. That’s it.

How to boil eggs perfectly for egg curry?

Place eggs in a utensil and fill it with water. Bring it to boil for 10 to 12 minutes.  Switch off the flame.

Using a spoon, remove the egg from the utensil and put it in cold water. Once the temperature comes down and its easy for you to handle it, peel the eggs and keep side.

Ingredients

Serving: 1 people

-2 tbsp of Oil

-1 small onion, chopped

-2 small tomato, chopped

-1 tsp of ginger, grated or crushed

-2 tsp of garlic, grated or crushed

-1 tsp of salt or as per taste

-2 boiled eggs, peeled

-1 tsp of cumin seeds

-3/4 cup of water ( 1 cup – 250 ml)

-1/2 tsp of Kasuri methi

-1/4 tsp of turmeric powder

-1/2 tsp of red chilly powder

-1/4 tsp of coriander powder

-2 tbsp of coriander leaves, finely chopped

Step 1: Boil eggs, peel them and set it aside. You need to hard boil the eggs. If eggs are overcooked then curry will not be appealing with mushy boiled eggs.

Step 2: Heat oil in pan.

Step 3: Add peeled eggs to the pan. Add a pinch of salt to the pan and let the peeled eggs sauté till you see light brown blisters over it.  Keep the eggs in a plate and set it aside.

Step 4: Add 2 tbsp of oil to the same pan.

Step 5: Once the oil is hot, add cumin seeds to it.

Step 6: Once cumin seeds crackles, add chopped onion, ginger and garlic to the pan, mix it well and let it sauté till onions turns translucent.

Step 7: As soon as onions turn translucent, add chopped tomatoes to the pan, mix it together and let it cook for 1 to 2 minutes.

Step 8: Add turmeric powder, red chilly powder, coriander powder to the pan and mix it well.

Step 10: Add kasuri methi and let the curry simmer for 5 minutes.

Step 11: Add peeled eggs, chopped coriander and garam masala to the curry. Mix everything well and let it simmer for a minute.

Switch off the flame.

Your egg curry is ready to be served. Serve it with Indian breads like roti, phulka.

Tips

1.Make sure you hard boil the eggs so that they are perfect for the egg curry. Overboiled or mushy eggs are not suitable for egg curry.

2.Adding of Kasuri methi uplifts the taste of curry. Try not to skip it.

3.Instead of using chopped tomatoes, you can even make a puree of tomatoes and then use in curry.
