Introduction

Chole Masala is a delicious, flavorful curry that can be served with chapati, puri, paratha, bhature, plain rice and jeera rice. Yes, Chole is a great companion. 🙂

Usually, chole is prepared for lunch and dinner. This sabji goes well for birthday parties when served with puri.

Puri, Chole masala and Shrikhand is a very famous combination in Maharashtra and trust me, its simply irresistible.

How to make Chole Masala?

Chole also known as chana/chickpeas is soaked in water overnight. After soaking for 8-10 hours, it is  cooked in pressure cooker until 5 whistles.

For making chole masala, onion-tomato gravy is needed. Once this gravy is cooked well along with spices and then chole is added to the gravy. After adding water to the curry, allow it to simmer.

Overall Time: 25 minutes

Ingredients

1.Chop onions. Wash tomatoes, ginger and green chilies and then chop it. Peel the garlic and chop it.

2.Add all these ingredients into blender with 1tbsp of fennel seeds. Grind it and make a puree.

3.Heat oil in a pan on medium-high flame.

4.Add cinnamon sticks, cloves and cardamom into the pan.

5.Add the puree to the pan and mix everything well. Let it cook for couple of minutes.

6. Now add turmeric powder, red chilly powder, cumin powder and garam masala. Mix well with puree and let it cook.

7. Add the boiled chickpeas into the gravy as it turns aromatic.

8.Now add water to the pan and mix everything well. Add salt to the curry and stir again. Add clarified butter and let it simmer for 10-15 minutes.

Tips

1.Adding of fennel seeds to puree uplifts the taste of gravy.

2.Add a little bit of butter to sabzi.

3.Usage of cinnamon sticks, cardamom and cloves enhances the taste and adds aroma to the curry.

4.Soaked cashew nuts can be soaked for some time and then crush it and use in puree.
