Introduction

Bhindi fry is a dry sabji made with bhindi (a.k.a Okra), spices, onion, and roasted peanut powder. It goes very well with chapati or phulka.

Bhindi is an Indian name(Hindi name) for Lady finger aka Okra. There are plethora of recipes of Bhindi like bhindi masala, bhindi fry, kurkuri bhindi, bhindi raita and so on. All these dishes tastes amazing and are very very healthy.

I usually make bhindi fry for lunch or dinner as it is loved by my kid.

Ladies finger aka okra is very good for eyes, improves immunity, helps in weight loss.

In this recipe, okra is washed thoroughly and then dried completely. After chopping of okra, it is cooked in oil along with onion, garlic, spices.  Once the okra is cooked properly, roasted peanut powder is added to it which ultimately enhances the nutrition in sabji.

The problem with bhindi is its sliminess. So to make it less slimy, we go for below two steps.

1.Wash the okra under running water thoroughly and then pat dry the okra using paper towel or kitchen napkin.

If you have planned well in advance to make this sabji, then wash them and spread on paper towel or kitchen napkin so that it can dry completely overnight.

2.Add lemon juice while cooking okra and that will make all the sliminess disappear. I go for this step every time I make this sabji and so I have done it today as well.

If you follow these two steps, then the sliminess from okra will be gone.

Instead of roasted peanut powder, you may even use roasted peanut and coconut powder or roasted sesame powder. If you wish, you can completely skip this.

Ingredients

-3 tbsp of oil

-1/2 tbsp of mustard seeds

-1 small sized onion, chopped

-2 to 3 cloves of garlic, crushed

-Okra(bhindi), chopped in small circular shape

-1/4 tbsp of turmeric powder

-1/2 tbsp of red chilly powder

-1/2 tbsp of garam masala

-Salt as per taste

-3 tbsp of lemon juice

-1/4 tbsp of sugar, powdered

-1/4 cup of roasted peanut powder

-1 tbsp of coriander, finely chopped

Step 1: Wash the okra under running water thoroughly. After washing, pat dry the okra using kitchen napkin or paper towel.

Step 2: Cut the head and tail part of okra and discard it. Now, after excluding head & tail part, chop okra in small circular shape and keep aside.

Step 3: Heat oil in pan.

Step 4: Add mustard seeds to the oil.

Step 5: Once mustard seeds splutter, add chopped onion to the pan. Let the onion cook.

Step 6: As onion cooks, it will start turning into pinkish colour. At this point, add turmeric powder.

Step 7: Add chopped okra and mix everything well. Let it cook for a minute.

Step 8: Now add lemon juice to the sabji and mix it well. Keep on stirring the sabji and after some time you will see all the sliminess from okra has disappeared.

It will take around 10 to 15 minutes for okra to cook. You need to keep on checking the sabji so that you know okra is cooked well and the sliminess is gone.

Step 9: At this point when sliminess is gone, add crushed garlic, red chilly powder, garam masala, salt and sugar to the sabji and mix everything well. Let it cook for couple of minutes.

Step 10: Check if okra is cooked properly. To check this, take a spoon and press it over one of the piece of okra. If it is cooked well, it will break immediately. Once the okra is cooked to this stage, add roasted peanut powder to the sabji and mix everything well. Let it cook for another 4-5 minute.

Key Points

1.Pat dry okra to make it less slimy.

2.Using lemon juice is very crucial to remove the sliminess and hence do not skip it.

3.You can even use roasted peanut and coconut powder or roasted sesame powder. If you wish, you can skip all of these completely.
