Introduction
Baked Masala Peanuts – a great munching to have with cup of tea or coffee. Its crunchy, spicy and healthy as they are baked instead of deep-frying.

How to make Masala Peanuts?
Place the peanuts in a bowl. Add besan and rice flour to the bowl. Add spices and salt. Mix everything well.
Now just add a little water and start mixing the peanuts and flour. The aim is to coat the peanuts with the masala.
Once the peanuts are coated well, they can be deep-fried or baked. I prefer baking them.

Ingredients
-2 cups of peanuts
-4 tbsp of besan
-3 tbsp of rice flour
-1/4 tbsp of cumin seeds
-1/2 tsp of amchur powder
-1.5 tsp of red chilly powder
-Pinch of asafoetida
-1 tsp of coriander powder
-Salt as per taste
-1/2 tsp of turmeric powder
1.Place the peanuts in a mixing bowl.
2.Add besan to the bowl.
3.Add rice flour to the bowl.
4.Add cumin seeds, turmeric powder, red chilly powder, amchur powder, coriander powder, salt.
5.Mix everything well.
6.Add oil to the bowl.
7.Add very little water to the bowl. Start mixing with your hands or with a spoon. Try coating the peanuts with besan & rice flour mixture. If you feel the mixture cant be coated properly due to its dryness, then again a little water to the bowl and start mixing again.
I have used 5 tbsp of water in total in few batches.
8.Now the peanuts are ready to be baked. Now grease the baking tray with oil and spread the peanuts in a single layer. Some peanuts may not have masala coated, then coat a bit of masala over the peanuts with you hands.
9. Start baking the peanuts. I have baked them in 4 minutes in total. I checked the peanuts after every 1 minute to see the result. Now the timing may vary as per the microwave and so check the peanuts after equal intervals.
10. You can let it cool for a while. Enjoy it with a cup of tea.
Tips
1.Besan and rice flour together make a very good coating for the peanuts.
2.Corn starch can be good replacement for rice flour.
3.You can add chaat masala with other masalas.
4.You can even add curry leaves if you like.
